To make cinnamon candied pecans add 1/4 teaspoon of cinnamon to the brown sugar, maple syrup, water, and salt in the skillet. Lower the heat and continue to cook until the syrup caramelizes onto the pecans, about 3 minutes. Remove from heat immediately (otherwise the sugars might burn). Add the pecans, maple syrup, vanilla and 1/8 teaspoon salt to the pan. Stir pecans well, so that they're completely coated in the maple syrup mixture. Pour in the sweetener, cinnamon and salt, give it a stir and then add the water, maple syrup and vanilla.
